Air Fryer Dessert: Strawberry Cheesecake Chimichanga
This fast air fryer dessert: Strawberry Cheesecake Chimichanga was really easy to make! It turned out delicious as well. I highly recommend it and it is a so easy a begginer can do it. I usually try not to do a lot of desserts but was asked to cook one on our Wine and Dine show. Being a busy empty nester single adult I like easy and fast with very little clean up. I used one large bowl to mix it in and a cookie sheet to assemble the Chimichangas.
Another thing I really appreciated about this recipe is it used a flour tortilla. This means I can actually assemble them one at a time and keep the contents in the fridge and make them one at a time when I feel like a dessert. However when I made my initial batch of 6 I took the extras to work and shared them. I was pleasantly surprised they reheated really well and were actually crispy on the reheat.
Why I really like this recipe:
Just so you know… I haven’t always been a foodie or a cook. I became a cook by neccesity. I went through a divorce later in life and really up until that time really didn’t do too much cooking. Other than grilling most of the cooking duties were handlled by my former wife. I did know how to cook, as I learned in high school when I took Home economics.
I enjoy cooking because I like to eat. Go figure… Eating out was not working well with my waisteline. Not that this recipe is overly healty but beats eating a dessert from fast food. There are ingredients you can substitute to make meal items healthier. I will try and add some of those below.
